This easy southwest tortellini pasta salad is ready in 30 minutes, loaded with veggies and protein and coated in a delicious and healthy southwest dressing.

  • 1 1/2 cup Cherry tomatoes
  • 1/4 cup Cilantro, fresh
  • 1 cup Corn
  • 1 clove Garlic
  • 2 Limes, juice from
  • 1 Red bell pepper
  • 1/4 cup Red onion
Pasta & Grains
  • 1 20 ounce packageThree cheese refrigerated tortellini
Baking & Spices
  • 1 tsp Chili powder
  • 1 tsp Granulated sugar
  • 1 Salt and freshly ground black pepper
Oils & Vinegars
  • 3 tbsp Olive oil
  • 2 tbsp Rice vinegar
Nuts & Seeds
  • 1 tsp Cumin, ground
