Cheesy #Chicken #Enchilada #Casserole

I like to call this my speedy version of chicken enchiladas. You get all the flavors packed in to this Cheesy Chicken Enchilada Casserole, but less time.

Ingredients

∙ Serves 8

Meat

• 3 cups Chicken, cooked

Produce

• 1 cup Corn
• 1/4 cup Onion

Bread & Baked Goods

• 18 6 inch corn tortillas

Dairy

• 3 1/2 cups Mexican blend cheese

Prepared

• 2 cups Enchilada sauce, red

Other

• 4 Tablespoons caned (mild green chiles, diced)
