Autumn #Salad #with #Roasted #Butternut #Squash


The best fall inspired salad recipe highlighting autumn produce like roasted butternut squash, beets and brussel sprouts on a bed of heirloom black rice dressed in a citrusy blood orange vinaigrette.





Ingredients
∙ Serves 6
Produce
  • 3 sprigs Basil, fresh
  • 2 Beets, red medium
  • 1 lb Brussel sprouts
  • 1 Butternut squash, medium size
  • 2 strips Orange peel
Condiments
  • 2 tsp Lemon juice
Pasta & Grains
  • 1 1/2 cup Black rice
Baking & Spices
  • 2 tsp Sea salt
  • 1 pinch Sea salt
Oils & Vinegars
  • 4 tbsp Blood orange olive oil
  • 3 tbsp Olive oil
Dairy
  • 2 1/2 oz Honey goat cheese
Liquids
  • 2 1/2 cup Water
Other
  • 1 Leaf bay
  • 2 tbsp Edible flowers ((optional for garnish))
  • 1 Orange (-zested)
